? Ingredients (Serves 2)

Broth

  • 4 cups chicken broth (or vegetable broth)

  • 1 cup water

  • 2 cloves garlic (minced)

  • 1 teaspoon fresh ginger (grated)

  • 2 tablespoons soy sauce

  • 1 tablespoon miso paste (optional but recommended)

  • 1 teaspoon sesame oil

Noodles & Toppings

  • 2 packs ramen noodles (fresh or instant, discard seasoning packet)

  • 2 eggs

  • 1 cup sliced mushrooms

  • ½ cup corn (optional)

  • 1–2 green onions (chopped)

  • 1 cup cooked sliced chicken or pork (optional)

  • Nori sheets (optional)

  • Chili oil or sriracha (optional)

1️⃣ Make the Broth

  1. In a pot over medium heat, add sesame oil, garlic, and ginger. Sauté for 1–2 minutes.

  2. Add chicken broth and water. Bring to a gentle simmer.

  3. Stir in soy sauce and miso paste. Simmer for 10 minutes.

2️⃣ Cook the Eggs (Soft-Boiled)

  1. Bring water to a boil.

  2. Carefully add eggs and boil for 6–7 minutes.

  3. Transfer to ice water, peel, and slice in half.

3️⃣ Cook the Noodles

  1. Boil noodles according to package instructions (usually 3–4 minutes).

  2. Drain and divide between two bowls.

4️⃣ Assemble

  1. Pour hot broth over noodles.

  2. Add sliced meat, mushrooms, corn, and soft-boiled egg.

  3. Top with green onions, nori, and chili oil if desired.
