This is herring roe — kazunoko — prepared in the tobiko style, tinted a warm orange and seasoned to a fuller, rounder savouriness. Where flying fish roe pops softly, herring roe gives you a firmer, more satisfying crunch that holds its own against rice and sauce. Spoon it onto a nori-wrapped gunkan or scatter it across a rice bowl, and you get both the colour of a sushi counter and a texture people remember. How to use

Thaw in the refrigerator before serving and use on the same day. Do not refreeze once thawed. No cooking required — spoon straight onto sushi, rice or salads.
